Healthy Ooey Gooey Sweet Potato Brownies
Happy FRIDAY! And Happy pre-Halloween weekend. 🎃
By this point, these brownies are a famous staple among parties that I attend. It’s an easy dessert that I love to whip together, and I don’t like to tell people they are sweet potatoes, but just regular brownies. Their mind is blown EVERY time. I love being able to indulge in brownies knowing that I’m just eating just 5, real ingredients: sweet potatoes, cacao, maple syrup, coconut flour, and almond butter. That’s it. No added sugars. I have probably made them 30 times and I love, love, love them.
These are it’s a great substitute for the Halloween candy. It’s all about balance though and NEVER restricting, so if you really want that candy you should definitely have some. 🍭 However, I can promise you that these brownies will satisfy your sweet tooth.
Ingredients:
2 medium sweet potatoes, baked
1/2 cup maple syrup
3/4 cup almond butter
1/2 cup cacao powder
1/2 cup coconut flour
Chocolate chips on top (optional)
Recipe:
Preheat oven to 400*F. Bake sweet potatoes in aluminum foil for 1 hour until soft, then let cool for 30 minutes.
Lower over to 350*F. Take the skin off of the sweet potatoes and add to a mixing bowl. Slowly add in wet ingredients to combine. Once combined, add in cacow powder and coconut flour one at a time until a thick batter.
Grease a 9x9 baknig pan with coconut oil. Add batter and pat down with your hands (I find that wetting your hands slightly helps to smooth it out). Bake 35 minutes at 350*F, then let them cool for 15 minutes. Cut them into squares (however big) and enjoy. 🖤
