Easy Asian Salmon Salad

Asian Salmon Salad with Roasted Sweet Potatoes

Ingredients

For the salad:

  • 2 salmon fillets (skin-on or skinless, ~6 oz each)

  • 1 teaspoon olive oil

  • 1 medium sweet potato, washed, skin left on, and cut into large cubes

  • 1.5 tbsp coconut aminos

  • 2 tsps garlic powder

  • 2 tsps onion powder

  • Salt & black pepper, to taste

  • 1 bag mixed kale/cilantro greens

  • 1 large ripe avocado, sliced

  • 1/3 cup raw or roasted cashews

  • 1/3 cup kimchi or sauerkraut (choose one or mix both)

  • 2 tsp sesame seeds

  • 2 tbsp chopped fresh cilantro

  • Optional: extra splash of coconut aminos over top for serving

Dressing:

  • 2 tbsp tahini

  • 1 tbsp olive oil

  • 1 tbsp coconut aminos

  • 1 tbsp apple cider vinegar

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt & pepper, to taste

  • Water to thin, if needed

Instructions:

  • Preheat Oven to 400°F.

  • Cut one medium sweet potato into large cubes keeping the skin on. Top with a drizzle of olive oil, 1 teaspoon coconut aminos, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt, and pepper. Spread on a parchment-lined baking sheet and bake for 30 minutes.

  • Pat salmon dry, rub with the remaining coconut aminos, and sprinkle 1/2 tsp garlic powder, 1/2 onion powder, salt, and pepper. Place salmon fillets on the another baking sheet lined with parcement paper. Add in 10 minutes after the sweet potatoes and bake for 20 minutes, or until salmon is cooked through and sweet potatoes are tender and slightly golden. Broil for 2 minutes at the end for a crispier top (optional).

  • Assemble the salads by dividing the salad greens between two bowls. Top each with roasted sweet potatoes, sliced avocado, cashews, kimchi/sauerkraut, and end with cooked salmon.

  • For the dressing, , whisk together tahini, olive oil, coconut aminos, apple cider vinegar, garlic powder, onion powder, salt, and pepper into small bowl. Add a splash of water to thin to desired consistency

  • Finish the salads by drizzling with dressing, add a splash of coconut aminos if desired, and finish with sesame seeds and fresh cilantro.
