Black Bean Muffins (with hidden greens)
Black bean chocolate-y muffins AND hidden greens? Yes please. I love sneaking in greens any way that I can, especially spinach since it doesn’t lose many nutrients when cooked and it’s flavorless. Even my pregnant, dessert loving business partner approved. :)
With the black beans and the brown rice flour, these are packed with fiber that help regulate your blood glucose and promote healthy bowel movements. There is also no added refined sugar, and they honey makes it super dense and gooey. Of course, try to buy all organic ingredients if you can, of course!
Ingredients:
Liquid ingredients:
1 can no-salt added black beans (keep the fluid)
3 large pasture-raised eggs
1/2 teaspoon vanilla extract
1/2 cup local honey
Dry ingredients:
1/2 cup non-alkalized cacao powder
1 cup brown rice flour (or gluten free flour of choice)
1/2 teaspoon baking powder
1/2 cup of dark chocolate chips (I love Equal Exchange)
Recipe:
Turn oven to 350*F and line a muffin tin with individual liners.
In a high-processing blender, blend all wet ingredients and blend until smooth.
While it is still blending, slowly add in dry ingredients except the dark chocolate chips until fully incorporated.
Mix in chocolate chips to the batter with a spoon.
Scoop (I use an ice cream scoop) mixture in 12 muffin tins and bake for 40 minutes until slightly firm.
Let them cool a bit. I top with almond butter :)
Most important component to the recipe: Be present while eating them and enjoy eating a dessert that is whole foods, not processed chemicals. :)
