Rachel King: Easy Chicken Tzatziki Bowl

Ingredients:
Chicken:
1 lb boneless skinless chicken thighs (or breast, but thighs end up juicier)
1.5 cups Greek yogurt
1 tbsp turmeric powder
1 tsp black pepper
1 tsp red chili flakes (if you like spicy)
2 tsp garlic powder
1/2 lemon juiced
2 tsp salt
For the Bowl:
Assorted vegetables such as diced cucumber, red bell pepper, tomatoes, onion, spinach, sprouts (I used home grown spicy radish).
Tzatziki sauce:
1.5 cups Greek yogurt
1/2 cucumber
1 garlic clove, finely grated
1/2 lemon
Dill or mint
Recipe:
For the chicken:
Mix all ingredients in a bowl, then add chicken and let marinade for at least 3 hours
Grill on a skillet on high (my preference for a good char flavor) for 5-6 minutes on each side. Let rest a few minutes then chop into cubes.
Tzatziki sauce:
Add Greek yogurt into a small bowl.
Cut cucumber in half and scrape out the seeds. Grate the cucumber on a cheese grater or smaller. Squeeze out excess juice, then add to the Greek yogurt.
Squeeze in lemon juice of the 1/2 lemon, then add in garlic glove finely grated.
To finish, add finely chop mint or dill. Put in fridge for at least one hour to let flavors meld.
Making the bowl:
In a bowl, add in chopped mixed vegetables , chopped chicken, and drizzle with tzatziki and garnish with dill or mint. Voilà!
