Cucumber, Cream Cheese and Tomato Toast 🍅 🥒 🍞
As summer rolls into its highest heat, our bodies naturally tend to crave foods that are high in water content! Cucumbers are about 96% water, and as Sakara says, you should really be eating your water in the summer. Our bodies just can’t seem to get enough of it.
Dave’s Killer bread is my absolute favorite because they don’t use any added fillers or ingredients, it’s packed with real whole grains and a ton of fiber, and they’re USDA certified organic. It checks almost all of my wellness boxes. This toast is an easiest light lunch or dinner, simply toasting the bread in the toaster, cutting up some cucumbers and juicy, sweet cherry tomatoes, all in combination with the creaminess of the cream cheese (I used dairy free) and nuttiness of sesame seeds (who else used to love the sesame bread at Lazarri’s if you’re a Jonesboro local? 🤤). I finished it all off with smoked paprika and dried oregano to pack in the flavors.

Ingredients + Recipe
2 pieces of Dave’s 21 whole grains and seeds bread
2-3 tbsps cream cheese (I used Kite Hill’s dairy free version, which is made with almonds and so good)
1 fresh cucumber
6 cherry tomatoes
2 teaspoons organic sesame seeds (which did you know is a superfood and can help with knee arthritis and are packed with tons of essential nutrients and fiber?)
1 teaspoon smoked paprika (my favorite of all favorites)
1 teaspoon dried oregano
Toast the slices of bread, add cream cheese once slightly cooled, then add most of the spices and seeds to the cream cheese so that it sticks. Add cucumbers, tomatoes, and the rest of the seeds and spices to finish it off. Easy.
