Summer to Fall Blueberry Smoothie Bowl

The transition between summer and fall is so exciting. The first hint of cooler weather has me wearing already plaid (stolen from my boyfriend, but also currently I’m under a plaid blanket), lighting more candles, and taking longer walks outside. Like most of us, it’s my favorite season. Last year we had Pumpkin smoothies at Story, and we’ll get there, but we’re not quite there yet…

This smoothie hints at fall with a dash of cinnamon and pumpkin seeds. It also keeps the summer vibes with blueberries (my favorite fruit) and beautiful burgundy plums, which are only in season through August. Full of fiber, antioxidants, and high blood-pressure fighting properties (thank you, cinnamon), it’s the perfect little combo. I’ve been making it all week.

When it’s a bit cooler, I also use fresh banana instead of frozen to keep the smoothie a bit warmer. Enjoy with your family this weekend, and be sure to get outside before the second heat wave begins. 🍃

Ingredients for 1 smoothie:

  • 1 cup frozen blueberries

  • 1/2 fresh banana

  • 1/2 cup fresh spinach

  • 2 tbsps ground flaxseed

  • 2 heaping tsps cinnamon

  • 2 tbsps chia seeds (makes it thick)

  • 1/2 fresh avocado

  • 1 scoop Vital Proteins Collagen

  • 1 cup unsweetened almond milk

  • Toppings:

    • 2 tbsps Almond butter

    • pumpkin seeds

    • brazil nuts (the best source of selenium. 2 brazil nuts contain the daily amount you need)

    • slivered almonds

    • gluten-free granola

    • gluten-free quick oats

    • 1 freshly cut plum

Recipe:

  • Blend all ingredients on low slowly transitioning to high until smooth (about 2-3 minutes). Pour into a bowl and top with toppings how you desire.

  • Enjoy with a friend, sit outside, or light a fall candle and stare at flowers like I did. 🌺
