Gluten Free Chocolate Chip Honey + Walnut Banana Bread
Hi wellness gang. :) Happy Wednesday. On this gloomy day in January, I manifested (yes, I do believe I actually manifested it) all weekends off for Q1 at the hospital. This is amazing, considering I am literally contracted for weekends, but really am so grateful that someone else wanted extra hours and I can squeeze mine in on week days between writing and resting. I’ve been able to pay the bills between it all as I transition out of Story, and for that, I am so grateful.
This past Sunday I made gluten-free chocolate chip banana bread, and I’ve been eating on it all week as a mid-day snack or late brunch. Banana bread and a good cup of coffee.. I don’t know if there’s any better combination, to be honest. Also, there’s just something about using bananas that I LOVE. They’re so cheap and in the stores all year long. I gave some to my co-workers today, and I am bringing more tomorrow PER request. I used a raspberry chocolate bar instead of just chocolate chips, which I feel like really elevated it. I keep my walnuts whole, but that’s by preference; chopping them is great too. The Purely Elizabeth Granola on top is the perfect little sweet crunch.

Ingredients:
5 large ripe bananas (the browner the better)
1/4 cup coconut oil, melted
1/3 cup honey
2 eggs
2 teaspoons vanilla extract
1 dropper of stevia extract (optional)
2 cups gluten-free all purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1 chocolate bar, chopped into chunks (I used the Theo dark chocolate raspberry bar)
1 cup coarsely chopped walnuts (I actually used red walnuts, which was fun. They’re less bitter and a bit nutter/creamier)
3 tbsps purely Elizabeth granola for topping (optional)
Fresh raspberries (optional)
Butter, almond butter/peanut butter, or honey for topping
Recipe:
Preheat over to 350*F.
Blend bananas in the blender until smooth, adding a splash of milk or water if you need to. Mix bananas, coconut oil, honey, eggs, vanilla, and stevia in a bowl until smooth.
One at a time, add in flour, cinnamon, and baking soda, mixing until smooth. Mix in walnuts and 80% of the dark chocolate bar, leaving a bit of it for topping at the end.
Line a bread pan with coconut oil to prevent sticking or use parchment paper. Pour batter into bread pan, adding walnuts, chocolate, raspberries and granola (if using) on top.
Bake 1 hour or 1 hour and 15 minutes until firm. Let it cool or 2 minutes before removing and slicing. Enjoy with butter, almond butter, or drizzled honey.
