Chickpea Chocolate Chip Cookies

Merry Christmas from me to you! While the holiday can be packed with many sugary desserts, I wanted to give you an alternative. My friends and I make healthy recipes for each other during the holiday, and they are SO GOOD! I know the word chickpea might scare you off, but don’t let it! You can use sweet potatoes, chickpeas, and even tofu to make desserts and it’s REAL food. This recipe has honey, almond butter, chickpeas, and one chopped chocolate bar for 12 cookies. They are friend approved and a dessert that is packed with fiber from the oats and chickpeas, but just sweet enough to be a dessert. SO good and I hope that you enjoy as much as I (and my friends!) did.

Ingredients:

  • 1 Cup chickpeas without liquid. I cooked my chickpeas, but you can just use a can of organic chickpeas drained and measured out to 1 cup.

  • 2/3 cup honey

  • 1/2 cup creamy almond butter

  • 1 1/2 cup oats

  • 2 tsps vanilla extract

  • 1/2 tsp baking powder

  • 1 tbsp ground cinnamon  

  • 1 tsp salt (yes, a whole teaspoon!)

  • 1 organic chocolate bar (I love Theo, Hu, and Endangered Species). Salted or nut butter filled/added is best!

Recipe:

  • Preheat oven to 350*F. Line a baking sheet with parchment paper for prep.

  • In a blender or food processor, add the chickpeas, honey, almond butter, and 1/2 cup of oats together and blend until smooth. Once smooth, add in cinnamon, 1 cup of the oats oats, baking powder, and salt and mix to combine. Chop up your chocolate bar into coarse and fine chunks and add to the mixture combining evenly.

  • Scoop approximately 2 tbsps into a ball into your hand and roll into a ball then add to the baking sheet to make 12 cookies. Press down slightly. Bake for 20 minutes in the oven until brown. Let cool for 10 minutes on a cooling rack and eat within 3-4 days. Enjoy with coffee, drizzled honey, or topped with almond butter/jam!
