Gluten-Free Holiday Honey Thumbprint Cookies! πͺ
I am teaching yoga and meditation tomorrow at Gearhead Outfitters downtown and I am SO excited that they also asked me to bring a healthy bake! I knew I would be making a lot of cookies in my kitchen, so I wanted it to be super simple and minimal ingredients. These have just 6 ingredients and have no refined sugar besides the bit of jam in the middle. I used Ghee, which is just butter with the milk solids removed and a bit easier to digest, but you can easily use salted butter. Mine arenβt the prettiest, but I love the character! Makes: 12 cookies
Store in the fridge for up to 3 days
Ingredients:
1 cup almond flour
3 tbsps softened ghee
3 tbsps local honey
1 tsp vanilla extract
1/2 teaspoon salt
Jam of choice (muddled berries also work great!)
A sprinkle of sesame seeds (optional)
Recipe:
Preheat oven to 350*F and line a baking sheet with parchment paper.
In a medium bowl, mix the flour, ghee, honey, vanilla, and salt into a dough until it is combined. It might seem a bit dry but when you roll them into balls, they will soften. Make sure Ghee is fully incorporated.
Wet your hands slightly, and roll into tbsp sized balls and place evenly spread on the baking sheet. Press the dough down into 1 - 1 1/2 inch cookies, then use the back a teaspoon or your thump to press a small divot into center of the cookie. Add your jam and sprinkle with sesame seeds.
Bake for 10 minutes until golden brown. Drizzle when honey when out of the oven. Let them cool for at least 15 minutes before eating. Enjoy fresh with tea (and maybe the Great British bake off!) or store in the fridge for up to 3 days.
