Gluten-Free Orange Cranberry and Honey Bread with a Sweet Cinnamon Glaze πŸŠπŸžπŸ‹

I’ve been in the kitchen so much during the first part of this year, and it’s brought me SO much joy. I tried this one again and again, and finally got it perfected πŸ‘Œ. I have been obsessed with citrus-y breads and muffins like lemon blueberry, chocolate orange, etc., but I actually think this combo might have turned out to be my favorite. Cranberries are loaded with antioxidants, and oranges paired with cinnamon are something I can never get enough of. It’s gluten-free and has no dairy either, and it’s a treat that I know you (and the ones you love) can whip up easily in the kitchen. 🍞 πŸŠπŸ‘©β€πŸ³

Ingredients:  

  • 1 cup of gluten free all-purpose flour

  • 2 cups almond flour

  • 1 tsp salt

  • 3 tsps. cinnamon (1 extra tsp for the glaze)

  • 2 teaspoons baking soda

  • 1 cup honey (extra 3 tsps for glaze)

  • 4 eggs (extra 1 for the glaze) at room temperature

  • 1/4 cup coconut oil melted and cooled.

  • 1 teaspoon orange extract

  • 2 teaspoons vanilla extract

  • Juice of 3 oranges (about 1/2 cup)

  • 1 cup cranberries

  • 1 orange and slivered almonds for toppings.

  • Add ons (optional): Butter, almond butter, more honey!

Recipe:  

  1. Preheat oven to 350*F. Line your bread pan with parchment paper or coat with coconut oil

  2. In a large bowl, whisk together the flour, coconut flour, baking soda, cinnamon and salt.

  3. In a separate bowl, mix together the eggs, honey, coconut oil, extracts, and orange juice. You can run the eggs under warm water for 1 minute if they are cold.

  4. Slowly add the dry ingredients to the wet ingredients and mix well to combine. Mix in your cranberries gently to the batter.

  5. Add batter into prepared loaf pan and spread out evenly, smoothing the top. Bake for 40-50 minutes until a tester comes out clean. Allow the loaf to cool for at least 15 minutes in the pan before removing (the smell will intoxicate you!)

  6. For the glaze, mix 3 tsps. honey with 1 egg, gently brushing over the top of the loaf with a spoon while it cools.

  7. Pull the bread out of the loaf and serve with butter or almond butter. Enjoy with coffee, tea, and good company (maybe even sit outside!). Store in the fridge for 4-5 days. 🍞
