Sunflower Butter Cookie Dough Balls

I hope that everyone is having a beautiful and present week! We are rolling into the time of year when we walk into the grocery store to view endless boxes of chocolates, mountains of Reece’s, and every sort of candy in between. During this time, I encourage you to choose more desserts that have real, simple ingredients.
During Valentine’s Day this year, let me remind you that you are in a relationship with your body. The food we eat affects how we feel, how we react to things, and how we move throughout life. It’s okay to enjoy candy! But when there are more nutritious alternatives that taste just as good, you can love your body a little more than when you feed your body things that aren’t even real food. Plus, these are truly fun to make, and they are something you can do as an activity with a loved one. Quality time is the best gift, anyways.
This week I have for you a recipe that is quick, simple, and that literally taste like cookie dough, without the eggs or worry of food poisoning. You can prep them in about 15 minutes and they require only 30 minutes in the freezer. They are made of whole foods so you know exactly what you are eating, and with ingredients like millet flour and flax seed you are also consuming a good amount of fiber (which we all need). I make these and keep them in the fridge for when I want to eat something sweet, fatty, and satisfying, while still taking in whole, organic ingredients.
You can make these for yourself, for your partner on Valentine’s Day, drop them off to a friend, or put them on things like I do (I think they make the best oatmeal and smoothie bowl toppings!).
For approximately 24 Sunflower Butter Balls.
Ingedients:
1/2 cup of:
Fine Almond Flour
Millet Flour
Ground Flax Seed
Sunflower Butter (no oils or salts added)
Local Honey
Dark chocolate chips
Recipe:
Mix sunflower butter and honey together until combined.
Add in dry ingredients one a time, mixing the batter after adding each one. Add in dark chocolate chips last.
Roll into one inch balls and place in the freezer on a plate for 30 minutes.
Enjoy! These stay good in the fridge for about a week.
