Cinnamon Banana Pancakes
Yay for a day snowed inside! Actually, an entire week snowed in. My dentist cancelled my appointment, I can’t go to into work because of the snow and the water being frozen in the pipes, and I can’t work on our coffee shop. In fact, I can’t even move my car… so, my winter hibernation has taken full force. Arkansas hasn’t seen 6” of snow in a long time (not in my lifetime!), and definitely hasn’t seen another 6” just two days later.
Being stranded at home is often a dream for a blogger. For me personally, not only have I been more productive without the temptation to go grab smoothie bowl ingredients (yes, that is a recurrent and very distractive habit that I hold), but I have been more diligent with my writing, updating my website, reading for school, and working on our business plan. During this time, many rounds of banana pancakes have been made. I went to go look for the recipe with my sister who quickly informed me that it was not on my BDW website. Of all of the times I have posted this recipe in my stories,I have never once written the recipe down in my actual recipes tab.
So, here it is documented! This is the recipe for the best and most minimal pancakes. make these about 1-2 times a month, if not more, and they take me about 10 minutes total. They’re super light and extremely easy. You can enjoy them for breakfast, brunch or whatever meal you choose because let’s be honest: pancakes (especially ones make with real and minimal ingredients) are good at any hour of the day.
Ingredients:
2 medium ripe bananas
3 pasture raised eggs
1 tbsp organic ground cinnamon
1/2 cup organic millet flour
1/2 cup organic ground flax seed
1 heaping tbsp creamy almond butter
1/4 cup organic unsweetened almond milk
Toppings: Almond butter for spreading, Dark Chocolate square, Maple Syrup
Recipe:
Blend all ingredients (except toppings, obviously) in a blender on low until combined (about 30 seconds- 1 minute)
Put a griddle or pan on medium heat, using coconut oil as the base so they don’t stick. Flip when the bubbles pop up (about 2-3 minutes).
Stack pancakes (your desired height… get brave) with almond butter spread in between each pancake. Top with chocolate square while it’s HOT and drizzle with maple syrup.
