Chocolate Mint Smoothie Bowl
Here’s a wonderful smoothie (bowl) recipe for you if you don’t know what to do with all of the mint in your pots that is overtaking all of your other herbs like it is for me!
I really like using fresh mint versus a mint extract because it’s just less processing in general, but also because I genuinely like the taste of fresh mint more. Of course, I love pairing it with chocolate. It reminds me of thin mints that I used to eat with my dad as a child, which we would get straight out of the freezer and eat together.
Fresh mint also provides many health benefits from the oils that are naturally found in the plant, including the suppression of cancer cells through apoptosis and other forms of cell regulation, have anti-bacterial effects in the body, as well as cardioprotective effects due to its anti-inflammatory and anti-oxidant properties (1). Mint also has been used throughout history to strengthen the stomach, relieve digestive symptoms, and help with respiratory tract problems (1). Plus it tastes fabulous (in a smoothie and in a cocktail).
Combined with cacao, this smoothie recipe is loaded with constituents that will benefit your overall heath, while also filling your belly and satisfying your sweet tooth. :)
Ingredients:
1/2 cup chopped frozen zucchini
1 cup frozen blueberries
1/2 cup loosely packed spinach
1/4 cup loosely packed mint leaves
1/4 cup cacao powder
1/4 cup Forager Cashewmilk Yogurt (also great for topping)
1/2 avocado
1 cup water or unsweetened nut milk
Toppings: nuts, cacao nibs, Cashewmilk yogurt, almond butter, fresh mint
Recipe:
Blend all ingredients into a high powered blender on low, working up to high. Blend for 3-4 minutes, top with toppings, and enjoy. :)
