Detox Sweet Potato Ramen

This week, I want to share with you all a yummy, detox ramen recipe with you all. I made this when my friend Alexandra came to visit last week. It’s healthy, easy, cheap, and warming. It’s the *perfect* light dinner, especially when it’s already dark and you want to cozy up by your (fake) fireplace. 🔥 And the answer is yes, I will pretty much add sweet potato into anything. It’s the perfect healthy starch for this light ramen recipe.

Ingredients for 4 servings:

  • Step 1:

    • 2 medium sweet potatoes, cut into 1/2 inch (or smaller) cubes

    • 3 tbsps sesame oil

    • 2 tsps ginger powder

  • Step 2:

    • 8 eggs, boiled and peeled (or save for later, 2/serving)

  • Step 3:

    • 1/2 white onion, thinly sliced

    • 2 stalks celery, halved and thinly diced into small half moons

    • 4 cloves garlic, minced

  • Step 4:

    • 32 ounces low sodium vegetable broth

    • 1 package of rice noodles or ramen (Ocean’s Halo or Lotus Foods are two healthier ramen alternatives noodle alternatives)

  • Step 5:

    • 1 cup sliced shitake mushrooms

    • 2 tbsps miso paste

    • 4 cups fresh spinach

    • 2 tbsps tamari

  • Step 6:

    • Cilantro and sesame seeds for serving

    • 1 block tofu, cut into 1 inch cubes.

Recipe:

Chop/prepare all ingredients before you start your recipe (so you can enjoy your time between while cooking!)

  1. Set oven to 400*F. Toss 1 tbsp sesame oil and ginger powder over sweet potato cubes in a bowl. Place in the over for 30 minutes.

  2. While this is cooking, boil eggs (when cooking 8, hard boiled is about 10 minutes).

  3. In a large pot, add sesame oil and bring to medium-high heat. Add onion and celery, stirring occasionally until both are are slightly translucent (about 4 minutes). Then, add in garlic.

  4. Add in the vegetable broth to the pot and bring to a boil. Add in ramen and cook until the noodles are cooked.

  5. Once the noodles are cooked, bring the temperature down to low-medium. Add in mushrooms, miso, tamari, and fresh spinach. Stir for another 3-5 minutes.

  6. Peel your eggs. Serve hot adding in tofu and eggs once your ramen is in the bowl. Finish with cilantro and sesame seeds.
