GF Cinnamon Orange Waffles
Developed originally as a Saturday special at Story Coffee House, I wanted to create a brunch recipe that was not only gluten-free, but combined two flavors that you don’t see together every day. That’s what’s so great about cooking: you are the creator, and food is the art. You can really just do what you want to.
Cinnamon always reminds me of fall and winter, but I feel like it is a spice that can be used at any time. Cinnamon added to food and drinks also has pain-relieving and anti-inflammatory properties, and helps to lower blood pressure.
Orange is one of the best flavors in baking, imo, and it reminds me of spring/summertime. You can use the zest of an orange and juice it, but I really just like using the extract for baking purposes because it packs such a punch, even though it is more processed.
Between these two flavors, it’s the perfect waffle for any season. With no added processed sugar besides local honey, this recipe doesn’t leave you with a sugar crash or heavy after eating it. I am absolutely obsessed with it and so glad I figured this one out in the kitchen. Plus, it’s less than 10 ingredients and you can throw all of it into a blender. Easy peasy.
Top with fresh cuties, maple syrup, whipped cream and a sprinkle of cinnamon and the waffles becomes a *chef’s kiss*, and actually does make you feel like a chef. I loved cooking these at Story, but I also love creating them at home for those lazy Saturdays - or just an afternoon that I have off and I want to because… we should live our lives how we want to, dammit.

_________________ Ingredients: _________________
1/4 cup melted coconut oil
4 teaspoons orange extract
4 eggs
1 cup unsweetened almond milk
1/2 cup honey
2 heaping tablespoons cinnamon
3 cups gluten-free all purpose flour
Toppings: whipped cream, fresh cuties, cinnamon, maple syrup

Combine all wet ingredients into a blender and blend until smooth.
While blending on low, slowly add in the dry ingredients.
Let sit out for 10-15 minutes (you can prep your toppings in this time and get your plates ready).
Pour directly into the waffle maker (spray first if not a non-stick appliance), on medium-high. It will depend on the waffle maker that you have, but flip about 3-4 minutes in.
Serve fresh, sit across from someone you love, and remember what sharing a meal is about and how special it really is.
