Sweet and Savory Breakfast Tacos
I’m really big on listening to your body when it comes to eating. You can call it intuitive eating, coined by Dr. Will Cole. You can also call it being creative in the kitchen and using food as a fun way to fuel your body.
On this particular Sunday, it was just me. I usually fast until about noon, but my body was hungry after an unexpected early morning. I looked at what I had in my fridge and I thought to myself: yes. I know what I want to do.
So, for this #wellnesswednesday, I give you breakfast tacos.
The first taco pictured is a simple cumin and turmeric egg taco. It was delicious, savory, and protein packed, and truly the secret was in the sauce. But then I was like.. hm, I need something sweet, too. Hence, the second taco , a raspberry, almond butter, and yogurt taco drizzled with honey. It hit the sweet spot I was needed, and the fats from the taco filled me up even more.
I really love the simplicity of whole foods. I like being able to look down on my plate and identify all of the ingredients, and these fun two takes on tacos did just that.
Enjoy them for a Saturday or Sunday breakfast, or if you’re like me and live an entrepreneur’s life and happen to be off on a Wednesday, enjoy them on that day. You could also eat them for dinner, but they’re such a good, light, breakfast.
Cumin and Turmeric Egg Taco ____________________________
White flour tortilla, heated lightly on a skillet
2 tablespoons of plain hummus (minimal ingredients and made with extra virgin olive oil)
2 scrambled eggs with 1 teaspoon of cumin and turmeric, sprinkled with black pepper.
1/2 fresh avocado
Primal Kitchen (best brand ever) Mango Jalapeno BBQ Sauce
Wrap and enjoy. :)
Raspberry Almond Butter Honey Taco ____________________________
White flour tortilla, heated lightly on a skillet
2 tablespoons of plain almond butter (minimal ingredients)
1 small handful fresh raspberries - I actually used frozen and it was a nice cold bite
1 dollop of So Delicious unsweetened coconut yogurt
A sprinkle of Navita’s cacao powder (would’ve used chocolate chips, but I didn’t have any)
Drizzled with local honey
Topped with raw walnuts for a crunch
