Easy Hummus Sprout Sandwich

I have been obsessed (and when I say obsessed, I mean it) with sprouting since I moved into my loft in 2020. I had a small garden box when I lived on campus where I grew fresh herbs, but honestly, they died every year. I want to say I am a gardener, but if I’m honest with myself, I’m definitely not. Maybe one day, but for now, it’s soil free growing for me. I learned about sprouting online after hearing Doug Evans on Rich Roll’s podcast, and from there, I was so hooked.

Since you don’t need a pot, yard, or even soil to sprout, I was able to do them on my kitchen counter. There are a few ways to do it, but I love getting a large mason jar, a sprouting lid, and a little stand or dish drying rack to drain them each day. All you do is rinse them in the morning or evening and in a few days, bam. You have sprouts. I’ve been using Sproutman for years, founded by two brothers and I love their energy. Not only do I love sprouting because it’s basically low maintenance gardening, but the nutrition is unmatched. Broccoli is known to be one of the most nutrition foods and contain anti-cancer properties, but broccoli sprouts are about 50 times more powerful in cancer prevention than mature broccoli, all because you’re bascially eating the sprouted seed. If you want to eat foods that fight cancer, THIS is the food.

I throw them into my bowls, smoothies, etc. just to add a ton of extra nutrients, but they’re also amazing on a sandwich.. Fighting cancer on a sandwich? Hell yeah. Boyfriend approved, here is my Easy Hummus Sprout Sandwich, which can easily be made gluten-free by switching the bread.

I love all kinds of sprouts, but my favorite is lentil, alfalfa, and broccoli. Broccoli are going to contain the most anti-cancer benefits, but for this recipe, I used lentil sprouts, but you can use whatever you’d like. You can also buy these already sprouted at the store, but let’s get back to our roots a bit.

Ingredients:

  • 1/4 cup Sprout broccoli, lentil, or alfalfa sprouts until mature, which takes about 3-4 days.

  • 2 pieces Ezekiel Bread, toasted and cooled (this is my favorite freaking bread because the ingredients are SO damn good).

  • Sliced tomato

  • Sliced cucumber

  • 2 tbsps HOPE Hummus (favorite hummus brand, the original is great but go crazy, queens)

  • 1/2 avocado, mashed

  • Italian seasoning to taste on the hummus or avocado

  • 1 tsp sesame seeds

Recipe:

  • Assemble the sandwich, adjusting amounts as desired.
