Chocolate Oat Collagen Breakfast Cookies

Bananas are one of the cheapest foods in the grocery store, and they’re available basically all year. I love to use them as a base for baking, tossing them into the blender then adding my other wet ingredients, followed by the dry ones. This minimal recipes packs collagen protein for skin and hair growth, flaxseed for a healthy fiber intake, and oats for sustenance. These cookies were boyfriend and friend approved, and the perfect, chocolatey start to my day. Enjoy. 🍪

Makes: 12 1-1.5 inch cookies

Time to make: 20 minutes

Ingredients:

  • 2 very ripe bananas, mashed

  • 1 cup quick rolled oats

  • 1/2 cup Bob’s Red Mill ground flaxseed meal

  • 1/2 cup chocolate Vital Proteins Collagen

  • 1/2 dark chocolate bars, chopped

Recipe:

  • Preheat oven to 350*F. Line a baking sheet with parchment paper to be ready for the baking..

  • Mash bananas into a large bowl and mix. Add oats, flaxseed, and collagen and mix to combine.

  • Chop chocolate into small chunks, then mix into the batter.

  • Scoop 1 heaping tablespoon into wet hands and roll into a ball, placing onto the parchment paper and mashing into a small cookie, about 1-2 inches in diameter. Repeat x 12, wetting hands in between rolling if the batter is sticking to your hands.

  • Bake for 15-20 minutes until firm (cookies should be slightly chewy).

  • Enjoy hot or keep in the fridge for up to 5 days.
