Mom/Daughter Galentines Pt. 1: Dark Chocolate Avocado Mousse

I was so inspired to get into the kitchen with my wonderful mother, who taught me how to cook and gave me such a love for cooking. February is ALL about love, and my mother is one that I love the most. This month is also for the GIRLS (and guys too!), and all about loving yourself. One of the ways to do that is to fuel yourself with food that is good for your body. This is a 3 part series of chocolate dessert recipes that are healthier alternatives to the traditional box of chocolates. Please enjoy this Dark Chocolate Avocado Mousse that is SO easy to make and only requires a blender and 5 ingredients. You’ll want to make this one on the regular, not just for Valentine’s!

Get in the kitchen with those you love, make memories, and be well. :)

Time to prep: 15 mins
Time to make: 10 mins
Makes: 4 servings

Ingredients:

  • 2 ripe avocados

  • 8 pitted dates, soaked for 15 minutes

  • 1/2 cup raw cacao powder (I love and swear by Navitas Organics!)

  • 1/2 cup unsweetened milk of choice (we used almond)

  • splash of vanilla extract (optional)

  • Pinch of sea salt

  • Toppings options: chocolate chips, fresh berries, coconut whipped cream, cacao nibs, nuts, coconut, or whatever you please!

Recipe:

  • Pit and soak your dates for 15 minutes. You can assemble the other ingredients and pull out your blender in the meantime. Discard the water from the dates after 15 minutes of soaking.

  • Add all ingredients into the blender and blend from low to medium until smooth. You might have to pause and take a spoon to stir it.

  • Scoop from blender into 4 serving ramekins and either eat fresh or put in the fridge for 20 minutes. Keeps in the fridge in an airtight container for 2 days.
