4 Ingredient Low Calorie Spaghetti Squash

This Healthy Comfort Food is absolutely unmatched. I haven’t made spaghetti squash that many times, but with how easy this recipe is I will ABSOLUTELY be making it more. It’s just 4 ingredients and mostly requires some chopping and baking. For the majority of the time I eat, I don’t focus on calories. However, when I’m wanting to slim down a bit, I do. This entire recipe is 250 calories / bowl of pasta, making it a nutrient-dense low calorie meal. It’s filling, tasty, SO cheap, and you also get in some vegetables. :)

Time to make: 1 hour total with lots of down time
Serves: 2

Ingredients:

  • 1 spaghetti squash, cut into quarters

  • 1/2 zucchini, finely diced

  • 2 small bell peppers, finely diced

  • Fire roasted canned tomatoes, added per preference

  • 1 tbsp avocado or olive oil

  • 3 tsps garlic powder

  • 3 teaspoons Italian seasoning or oregano

  • 1 teaspoon turmeric powder

  • Salt and pepper to taste

  • Optional: 1/4 cup of organic hummus to make it extra creamy.

Recipe:

  • Preheat oven to 400*F.

  • Cut quash into quarters and lay on a baking sheet. Drizzle lightly with avocado or olive oil, then add 2 tsps garlic powder, 2 tsps oregano or garlic powder, salt and pepper. Place them face down on the baking sheet and bake for 45 minutes.

  • While this is baking, you can wait about 20 minutes (laundry, reading, quality time with family!). With about 10 minutes left, sauté chopped vegetables lightly in olive oil with 1 tsp of each spice until tender.

  • Pull the squash out of the oven and let it cool for 10 minutes. Scrape squash into strands with a fork and divide into two separate bowls. To make it extra creamy, divide hummus evenly and mix into the spaghetti squash. Top the pasta with vegetables and salt and pepper to taste, then add fire roasted diced tomatoes from the can to preference.

  • This is great reheated as well, and you can add a bit more hummus at the end. I also ended up adding black beans when reheating because I had them, and it was so good!
