Mom/Daughter Galentine’s Part 3: Healthy Snickers “Bars”

Made with dates, almond butter (you can use peanut butter!) and organic chocolate, this is recipe 3/3 for my mom and I’s mother/daughter Galentine’s recipe series! It has been so fun to be in the kitchen with my mom (one of my best friends!) for this series, but it’s also so nice to enjoy traditional recipes without all of the additives that usually go into desserts. I love healthy alternatives to dishes; they’re a closer representation to actual food in its first state - what we’ve gotten so far away from. While we still want to indulge in dishes that are luxurious and made famous due to their taste, we can do so a little bit closer to food’s natural form.

Time to make: 35 minutes

Makes: 3 larger snicker bars or 9 small mini bars

Macronutrients/small bar:

Ingredients:

  • 9 organic pitted dates

  • 1/3 cup organic peanut butter (or nut butter of your choice- we used almond butter)

  • Organic dry-roasted nuts of choice, coarsely chopped (we used almonds)

  • 1 tsp unrefined coconut oil

  • 1.5 bars of dairy-free dark chocolate - we used Theo

  • Pink Himalayan sea salt

Recipe:

  • Use a paring knife, slice the dates open lengthwise and remove the pits. Transfer the pitted sliced dates to a small baking sheet, plate, or platter with parchement paper.

  • Use a butter knife or a small spoon to stuff dates with 1 - 2 teaspoons of nut butter. The amount depends on how large your dates are and how much almond butter you want stuffed inside.

  • Sprinkle the almond butter with chopped nuts lightly and press down with your hands.

  • Transfer the chocolate and coconut oil to a microwave-sate bowl and microwave for 25-second intervals until melted stirring well between each interval, until fully melted.

  • From here, you will line 3 dates in a row slightly meshing them together to be the length of a chocolate bar. Drizzle melted chocolate over the stuffed dates, connecting them but not fully covering them. This is essentially to bind them together before the final coating. Place in the freezer for 5 minutes.

  • Reheat the chocolate if needed, then drizzle the chocolate again over the dates to cover it. Sprinkle with nuts and sea salt. Place back into the freezer and chill until the chocolate has hardened, about ~30 minutes.

  • You can pick the bar up gently or you can break them into small bite size snickers bars. These store well in the freezer for 2-3 months.
