The Most Flavorful Springtime Avocado Toast

I am SUCH a sucker for avocado toast, and this recipe is absolute perfection. Inspired by the recipe that was SUCH a hit at the coffee shop I co-owned for 19 months, this has fiber with chickpeas, healthy fats with sesame seeds, olive oil, and avocado, and greens with oregano and cilantro. It’s an absolute EXPLOSION of flavor in your mouth and it’s so cheap, easy, and QUICK to make. You’ll make this one on repeat, I promise.

Ingredients:

  • 1 slice of bread (I love Dave’s Killer 21 Whole Grain and Seed Bread)

  • 1/2 of one ripe avocado

  • 1/4 cup cooked chickpeas

  • 1 tsp smoked paprika

  • 1 tsp dried oregano

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • Cut sprigs of cilantro

  • Sprinkle of sesame seeds

  • A drizzle of olive oil

Recipe:

  • Toast bread to desired toast level in a toaster or toaster oven. Let cool for 1-2 minutes.

  • In a small bowl, use a fork to mash the chickpeas until moderately mashed (some solids still in the mash). Add the 1/2 avocado to the bowl, mash, and mix together. Add in all the spices.

  • Spread the chickpea/avocado mash evenly onto the toast. Top with sprigs of cut cilantro, sesame seeds, a dash of paprika, and finish with olive oil. Enjoy FRESH and know that you are consuming SO many nutrients in this satisfying dish.
