Glowing Skin Pumpkin Spice Collagen Balls

‘Tis the season!!! (well, sort of)

I read yesterday that Labor Day marks the “end” of the summer holiday in America, and while it’s not yet October, all things pumpkin are making their way into our lives. Pumpkin is technically a fruit because it has seeds, and while it may be used in mostly decorations and pies, you can use it in lattes (see my pumpkin spice matcha) and in desserts and savory dishes. Pumpkin is LOADED with Vitamin A, which is great for the skin, and this recipe in particular is packed with collagen, which is also great for the skin. Collagen is a supplement that I DO believe in, especially in powdered form. My go-to’s are Vital Proteins, Live Conscious Collagen, and Further Foods Collagen, which just released a pumpkin spice flavor that is to DIE FOR. Ingredients (makes ~12 balls):

  • 1 cup rolled oats (gluten-free if needed) — One Degree Organic Foods is my go-to

  • ½ cup almond flour or oat flour (un-blanched keeps the skin and fiber on!)

  • ⅓ cup pumpkin purée (unsweetened)

  • ¼ cup Further Food Pumpkin Spice Collagen Powder (use code BDWELLNESS for 15% off if you missed the Labor Day Sale)

  • 3 Tbsp no-oils added almond butter (or cashew butter for creaminess)

  • 3 Tbsp maple syrup or local honey

  • 2 Tbsp chia seeds or ground flax (for fiber & omega-3s)

  • 1 tsp pumpkin pie spice

  • 2 tsps cinnamon

  • Pinch of sea salt

  • Optional add-ins: 2 Tbsp mini dark chocolate chips, cacao nibs, or crushed pumpkin seeds for texture

  • Coating Ideas:

    • Roll in desiccated unsweetened coconut flakes

    • Dust with cinnamon

    • Roll in crushed pumpkin seeds

Recipe:

  1. In a bowl, mix pumpkin purée, nut butter, and maple syrup/honey until smooth.

  2. Add oats, almond flour, collagen, chia/flax, spices, and salt. Stir until combined.

  3. Fold in chocolate chips or seeds if using.

  4. Chill dough for 15–20 minutes (firms up for rolling).

  5. Roll into ~1 Tbsp-sized balls. A trick is to wet your hands before rolling and wash them between a few rolls so you don’t get your hands too sticky.

  6. Coat in desired coating if using.

  7. Store in fridge up to 1 week or freeze for grab-and-glow snacks. 🤎
