Viral Tiramisu Chia Seed Pudding
To be honest, I wanted something COOL and light to end the summer season with, but I ALWAYS go back to basics when it comes to filling breakfasts, which includes chia seed pudding. I had a few videos hit a large audience this week on my social media, sow e are CONTINUING that energy with this insane recipe. Combining two of my favorite loves (coffee and cacao powder), this recipe will not only pick you up energetically but will provide you with a balance of healthy fats, protein, and keep you full and satisfied. Ingredients:
4 tbsps chia seeds
1 tsp honey
1 cup unsweetened almond or coconut milk
1 shot or 1.5 oz of espresso (coffee substitute works, itβs just not a strong in flavor)
1 splash almond extract (vanilla works as a substitute)
2-4 ounces of yogurt of choice (greek is amazzzzing, but I also love Forager and Kite Hill as clean plant based options)
Cacao powder for dusting on top
Optional: 1/2 -1 scoop protein powder of choice (I have been loving Chocho powder to mix it up, but also love Truvani as a great plant based option with minimal ingredients if I am going to use protein powder)
Recipe:
Combine chia seeds, almond milk, espresso, almond extract, and protein powder (if using) in a small bowl or container. Stir to combine, until all protein powder is incorporated. Let mixture sit for about 5 minutes, stir again to break up clumps. Another option is to add to a mason jar and shake thoroughly.
Place mixture in the fridge for a few hours (or overnight).
When ready to serve, remove mixture from fridge and stir. Add mixture to fill half of a glass or mason jar, then top with a layer of yogurt. To finish, dust cocoa powder on top and serve. Option to add a coffee bean or two for aesthetics. β¨
